Recipe:
2 1/2 cup flour
3/4 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp ground cloves
3/4 tsp salt
10 Tbsp unsalted butter at room temperature
1 1/2 cups sugar
2 large eggs at room temperature
1 cup apple cider
3/4 cup unsweetened applesauce
2 tsp vanilla extract
Preheat oven to 350 deg.
Coat a 10 cup bundt pan generously with butter then lightly flour. Whisk together flour, baking powder, baking soda, spices and salt.
Beat butter and sugar in large mixing bowl on medium speed until light and fluffy. Reduce speed to low and add eggs one at a time. Combine cider, apple sauce, and vanilla in a small bowl. Beat in flour mixture, alternating with the cider mixture, beginning and ending with flour mixture, just until incorporated.
Spoon batter into bundt pan then smooth with spatula. Tap pan sharply on counter to reduce air bubbles. Bake 40-50 minutes until cake is golden, springs back to the touch, and when toothpick is inserted, comes out clean or with a few crumbs attached. Cool in pan on wire rack for 10 minutes then carefully invert onto a rack.
Sprinkle with desired topping and enjoy.
